Turkey + Potato Casserole

I came up with this recipe one night when I had turkey breast steaks and no idea what to do with them. I came across a picture of a casserole and thought mmm that sounds yummy! It's SO simple to make and requires hardly any prep work. Not to mention it's pretty yummy. There're so many ways to customize it and change it up!

So here it goes:

Ingredients:

  • 4 (or about 1 lb) Turkey Breast Steaks
  • 1 Bag Organic Fingerling Potatoes
  • ½ Cup Olive Oil
  • 1 Tsp Salt
  • ½ Tsp Pepper
  • 1 Tbsp Paprika
  • 2 Tbsp Garlic Pepper
  • Mozzarella
  • Optional: 1 Cup Crumbled Bacon, 2 Tbsp Hot Sauce (only if you like it HOT), 1 Cup Green Onions + Ranch or Sour Cream for serving

Instructions:

  1. Heat oven to 400 degrees F.
  2. Spray 9x13 baking dish with cooking spray. Set aside.
  3. Wash + pat dry potatoes. Cut into cubes and set aside.
  4. Pat turkey steaks dry + cut into cubes. Place with potatoes. 
  5. Mix together the oil, salt, pepper, paprika + garlic pepper. *If you are wanting to add hot sauce, bacon, or green onions now is the time! 
  6. Toss potatoes + turkey with oil mixture. 
  7. Carefully pour mixture into baking dish.
  8. Cook for 50 minutes. Make sure to stir mixture every 20 minutes. 
  9. Cover top of casserole with cheese mixture.
  10. Cook another 5 minutes until cheese is melted. 
  11. Serve with drizzled ranch or sour cream.
  12. Enjoy!
