Perfect Pot Roast

This is by far my favorite pot roast recipe in the world! It's so easy to make and yes, it does take all day but there's a short cut.

 

Ingredients:

  • 2-3lb chuck roast
  • 2 small onions
  • 1 bag of baby carrots
  • 7-10 yellow dutch potatoes (or 5-6 russet peeled)
  • 1 brown gravy package
  • 1 ½ cups cold water
  • 1 Tbsp freshly chopped parsley
  • organic coconut oil spray

 

Instructions:

  1. First spray the inside of your crock pot with cooking spray. Then place the chuck roast in your crockpot.
  2. Cut potatoes into wedges and cut onions into quarters. If you're using russet potatoes make sure to peel them first! Place the onions, potatoes and carrots around the chuck roast.
  3. In a small bowl mix cold water with brown gravy package. Stir until well combined. Pour gravy mixture over chuck roast and veggies.
  4. Cook on low for 8 ½-9 hours OR if you don't have time for that, cook on high for 4-5 hours.

This is perfect for any occasion. It's so simple and doesn't need any other sides with it. I especially love making this on rainy days. It's such a comfort food! Bonus: it's just as good the next day in a sandwich! Enjoy y'all!
