This is by far my favorite pot roast recipe in the world! It's so easy to make and yes, it does take all day but there's a short cut.
Ingredients:
- 2-3lb chuck roast
- 2 small onions
- 1 bag of baby carrots
- 7-10 yellow dutch potatoes (or 5-6 russet peeled)
- 1 brown gravy package
- 1 ½ cups cold water
- 1 Tbsp freshly chopped parsley
- organic coconut oil spray
Instructions:
- First spray the inside of your crock pot with cooking spray. Then place the chuck roast in your crockpot.
- Cut potatoes into wedges and cut onions into quarters. If you're using russet potatoes make sure to peel them first! Place the onions, potatoes and carrots around the chuck roast.
- In a small bowl mix cold water with brown gravy package. Stir until well combined. Pour gravy mixture over chuck roast and veggies.
- Cook on low for 8 ½-9 hours OR if you don't have time for that, cook on high for 4-5 hours.
This is perfect for any occasion. It's so simple and doesn't need any other sides with it. I especially love making this on rainy days. It's such a comfort food! Bonus: it's just as good the next day in a sandwich! Enjoy y'all!
