I'm not a HUGE sweets person. I never loved candy like most kids, and I really have to be in the mood for a cookie. But cakes, cakes are my thing. I love a simple cake that can go well with a cup of morning coffee (or tea if that's your thing).
This recipe is not only delicious, but SUPER easy too. I love that there is no frosting that needs to be added, just a dusting of powdered sugar. It's also really beautiful to look at. So, here's what you need!
Ingredients:
- 210g organic flour
- 2 tsp baking powder
- 1/2 tsp salt
- 198g organic sugar
- 1 stick organic unsalted butter
- 2 tsp pure organic vanilla
- 2 pasture raised eggs
- 120g raw or low temp pasteurized organic whole milk
- powdered sugar for dusting
Directions:
- Heat oven to 350ºF. Line a 9in round cake pan with parchment paper and grease sides.
- In a large bowl beat sugar and butter until fluffy. Add the eggs and vanilla, and beat until well mixed.
- In a separate bowl, whisk all the dry ingredients (except powdered sugar).
- Add half of the dry ingredients to the wet ingredients. Add half of the milk, and gentle stir. Repeat with dry ingredients and milk, and gently mix. DO NOT over mix or your cake will be dense and not rise as well.
- Pour batter into cake pan and bake for about 25-35 minutes depending on your oven. I would check it at 25 minutes and if it still isn't fully cooked through, continue in 3 minute intervals. A toothpick should come out clean when it's done.
- Let cool on a wire rack. Once it's cool, turn it out onto a cake stand or platter. Wait to dust with powdered sugar until serving. If you dust it too soon it may just get absorbed into the cake and dissolve.
- Enjoy with a cup of coffee or tea! You can also serve this with fresh berries and homemade whipped cream for a more berry shortcake feel.
