Lemon Garlic Chicken

Oh. My. Yum. This recipe is so delicious! I snuck my husbands left overs off of his plate. Shhhhh!

This sauce is to die for. It goes perfectly with the chicken and rice. My husband specifically asked me to just make the sauce again. It's a fast and easy dinner recipe, not to mention it's delicious. One of my favorite things about this recipe? It just takes ONE pan. The less work I have to do, the better. I love serving this with rice and veggies. So here it is!

Here's what you need:

Chicken:

  • 2-3 lbs organic chicken thighs, less if you have a smaller amount of people to feed (you can also use chicken breasts if you prefer but I like thighs best.)
  • salt and pepper to taste
  • organic garlic powder to taste (I probably use 2-4 tsp roughly)
  • 2 Tbsp olive oil or avocado oil
  • 1 1/2 cup homemade (or organic store bought) chicken bone broth
  • 3 Tbsp organic minced garlic
  • 2 Tbsp organic lemon juice
  •  cup minced organic sweet onion (shallots work too!)
  • 4 Tbsp grass fed butter (I like Kerry's Gold Irish Butter if I can't find organic, it has a creamy yummy taste)
  • ½ cup organic heavy cream
  • 2-3 Tbsp dried organic parsley (optional)

Instructions:

  1. Sprinkle salt, pepper and garlic powder on both sides of the chicken thighs.
  2. In a small bowl or measuring cup whisk together chicken broth, garlic and lemon juice. 
  3. In a large saucepan heat the olive oil on medium heat. Add chicken thighs and cook until juices run clear or the internal temperature reaches 160°-165º F. Place chicken on a plate and set aside.
  4. Add onions and chicken broth mixture to saucepan. Using your whisk scrape off the brown bits at the bottom of the pan. These little brown bits are the best part! So yummy! 
  5. Cook until the sauce has reduced just a bit. Usually 5-10 minutes.
  6. Remove saucepan from the flame. Add butter and whisk until melted. 
  7. Add heavy cream and whisk sauce until combined.
  8. Place saucepan over flame for about 30 seconds or to re-heat sauce. DO NOT let it boil.
  9. Remove from flame and add chicken back to pan. Coat all sides of the chicken in sauce. Serve on top of rice and drizzle each piece of chicken with remaining sauce. Sprinkle dried parsley on top. You can also serve with lemon slices. 
  10. Serve with steamed broccoli or asparagus.

Rice:

  • 2 ½ cups organic jasmine rice
  • olive oil
  • 4 cups water
  • pinch of organic garlic powder (optional)
  •  cup organic onion, finely chopped
  • 2 Tbsp minced organic garlic
  • 1 tsp sea salt

Instructions:

  1. Add olive oil and onion to a large sauté pan set on medium heat. Cook onions until fragrant and soft. Be careful not to burn or color them. 
  2. Add salt, rice and garlic to pan. Stir together until rice starts to become translucent.
  3. Stir in water. Cover, put on simmer and cook for 10-15 minutes. 
  4. Check on rice, make sure to stir it and add a little water if needed. Cook until the rice has absorbed all the water and is soft.
  5. Remove from heat, fluff and add garlic powder. 
  6. Enjoy!
